Easy Hamantaschen

Yeild: 3-4 dozen cookies

INGREDIENTS:


3 cups all-purpose flour

1/2 tsp salt

1 cup (2 sticks) unsalted butter, softened

1 cup sugar

1 large egg

2 tsp vanilla

1 cup jam or filling of choice


DIRECTIONS:

1. Using your mixer, cream together the butter and sugar until the mixture is light and fluffy. Add the egg and vanilla and mix until well blended.

2. With the mixer on low, gradually add the flour and salt to the butter mixture until the two are thoroughly blended.

3. If you want to add food colouring, do so now.

4. Turn the dough onto a work surface and divide it into 2-3 equal portions.

5. Roll out dough in between 2 pieces of parchment paper, and then place in fridge for 20-30 minutes before cutting out the circles.

6. Using a circle cookie cutter or the top of a glass, cut out circles from your rolled out dough. Place circles on a baking mat. Re-roll and cut until all the dough is used.

7. In the center of each circle cut out, place a small dollop of jam or filling. Bring the sides of the dough up and pinch in all 3 corners, forming a triangular shape.

8. Place finished unbaked cookies in fridge for an hour to set.

9. Bake in 350-degree oven for 8-10 minutes until edges are golden brown. Let cool.

***Optional: once cooled, you can drizzle finished Hamantaschen with melted chocolate or candy melts and top with sprinkles. Enjoy!
